Recipe: Grape Avocado and Arugula Salad

Enjoy this light, yet satisfying, Grape Avocado and Arugula Salad recipe for your next meal in between holiday feasting!   

Prep Time: 15 – 25 minutes

Servings: 3

 Ingredients

• 6 cups fresh arugula
• ½ cup goat cheese, crumbles
• 1 avocado, pitted and diced
• 2 cups red or green seedless grapes, halved
• ½ cup walnuts and/or pecans, chopped
• OPTIONAL –  ⅓ cup extra virgin olive oil
• OPTIONAL – ¼ tsp sea salt
• OPTIONAL – 3 tbsp white balsamic vinegar
• OPTIONAL – 2 tbsp honey
• OPTIONAL –  ⅛ tsp ground pepper

Instructions

1. Combine arugula, grapes, avocado, nuts and red onion in a bowl and toss.

2. Sprinkle salad with crumbled goat cheese and serve immediately.*

Variations

1. Whisk olive oil, balsamic vinegar, honey, sea salt and pepper together until well combined.

2. *Drizzle on top of salad and serve.
